Dimma #035 coffee's maturation journey from Ethiopia

Unlike Kemgin or Cerro Azul who left their homeland for a foreign country to develop, Dimma #035 coffee grew up in the land where it was born - the Bench Maji Zone, Ethiopia. These coffee sprouts belong to the premium Gesha Illubabor Forest variety, discovered in 1974 in the primeval forest of Illubabor, in the southwest of this country.

After 2007, Illubabor Forest was selected by Gesha Village Coffee Estate, brought to Dimma #035 block - a famous gold mining town in the north of the farm. When grown here, these coffee trees have fully promoted their intrinsic strength in terms of resistance to pests and diseases, yield and quality increase every year, providing a stable and long-term livelihood for the community. copper. Therefore, the farmer took the name Dimma to call this precious coffee variety to show his appreciation and love.

Dimma #035 coffee is grown by a team of small farmers in a large forest ecosystem with a unique terroir created by the people's own hands. They are fully nourished by the rich red-brown humus soil rich in minerals, surrounded by diverse vegetation and wildlife. This creates a harmonious symbiotic environment that helps plants grow healthy naturally without the need for growth promoters or chemical fertilizers. It is also organically grown, so Dimma's flavor is always delicate, clean, extremely safe. Moreover, the land where Dimma grows at an altitude of over 1,900m makes the tree prolong the maturation cycle so that the seeds have time to accumulate substances and ripen evenly. Since then, the texture of the coffee beans becomes stronger, the organic acid content inside produces more to help the flavor become richer and bring a unique feature that belongs only to Dimma.

Dimma #035 coffee pre-processing process

Not only carefully cultivated, Dimma #035 coffee is also carefully processed by Gesha Village farmers using a wet pre-processing method to keep the original essence of the bean. First, the coffee will go through a screening step to select beautiful beans that meet quality standards for preliminary processing. Next in the washing process, Dimma #035 will be put into a mechanical degreasing machine to remove the outer layer of fruit pulp. The juicy red coffee berries will be rubbed many times until the stout core is released. After that, they are taken to a large tank to be washed many times until the coffee beans are completely clean. New kernels will be immediately dried in the shade for 2-3 days until the moisture content is 30%, then brought to high sieves for sunbathing. Dimma will have to go through this process from 12-19 days until it reaches 11% humidity to get the most perfect aroma that makes the experience fall in love.

Typical flavor of Dimma #035 coffee

Thanks to genetics from Gesha Illubabor Forest, terroir and careful care in the stages of cultivation and preliminary processing, Dimma #035 coffee beans contain the typical aromas of the Ethiopian countryside. The note evokes the complexities of peach and mandarin. The natural and familiar aroma of fruit trees in the home garden makes everyone feel comfortable and comfortable. The taste is rustic, gentle like the good, sincere and straightforward nature of the people of Bench Maji land. The taste is so clean, fresh, and bright that, even if you're not an expert, you'll immediately see a light, slightly sour taste when the coffee layer touches the palate. Drops of Dimma spread on the tip of the tongue, drifting down the throat with the sweetness of something lingering.
