Criollo
In the Specialty coffee world, Criollo is highly regarded for its sweet, slightly bright, and gently spiced flavor profile, with tasting notes often described as chocolate, hazelnut, cream, fruit, and floral.
In Mexico, Criollo is cultivated at elevations around 1,550 meters above sea level and typically processed using the traditional Honey method. This results in a cup with sugarcane-like sweetness, caramel and honey notes, mild acidity, and a smooth body.
Though not as widespread as some other Arabica varieties, Criollo continues to hold a special place in the Specialty coffee scene due to its unique sensory character and high cup quality.
