Ethyl Acetate
Ethyl Acetate is a naturally occurring ester compound found in fruits and vegetables, commonly used in the decaffeination process to produce decaf coffee.
In this process, Ethyl Acetate binds with caffeine in green coffee beans, allowing for efficient caffeine extraction. The beans are then thoroughly washed to remove any remaining traces of Ethyl Acetate.
However, in specialty coffee, this method may diminish freshness and vibrancy, particularly in regionally distinctive coffees such as Ethiopia (floral and citrus notes) and Kenya (berry and wine-like flavors).
