Chiroso
Chiroso is a rare and prized Arabica variety originating from Urrao, Antioquia, Colombia. It was identified by farmer Jose Arcadio Caro for its strong adaptability to cool climates. The variety is commonly divided into Caturra Chiroso and Bourbon Chiroso, and is often processed using the washed method to highlight its brightness and floral character.
The tree features large leaves and long, slender cherries, thriving at elevations between 1,800 and 2,000 meters when grown under shade, where slower maturation allows for better sugar development. In the cup, Chiroso is celebrated for a memorable trio of flavors: jasmine and lemongrass on the opening sip, peach and honey through the middle, and a clean, refreshing finish reminiscent of Ethiopian coffees, yet with a fuller body.
Within the international specialty coffee scene, Chiroso is often called the “Gesha of Colombia” and has gained recognition through multiple standout performances at the Cup of Excellence Colombia.
