Italian Roast
Italian Roast is the darkest level of coffee roasting within the Dark Roast category—one of the three main roasting stages, alongside Light Roast and Medium Roast. This roast reaches approximately 245°C (473°F), occurring after the second crack, and originates from Italy, where it is especially popular in the southern regions.
However, in the world of specialty coffee, this roasting method is rarely used, as it diminishes the delicate and complex flavors, such as fruity, floral, and natural sweetness.
For this reason, specialty coffee is typically roasted light to medium to preserve its natural characteristics and rich flavor profile.
