Prewetting
Prewetting is the process of wetting coffee grounds with a small amount of water before brewing. This step allows CO₂ to escape and improves water permeability, ultimately optimizing extraction.
In specialty coffee, prewetting is commonly used in filter (pour-over), AeroPress, and shot (espresso) brewing to enhance extraction and prevent uneven water flow. In espresso, it contributes to a more consistent shot, while in pour-over, it ensures even coffee bloom and maximizes flavor release.
Additionally, this process helps eliminate paper filter odors and stabilize the brewing temperature, creating the ideal conditions for specialty coffee to showcase its pure flavors.
