Tyoxi
Tyoxi, or Tyoxidation, is an innovative washed processing method developed by Pepe Jijón of Finca Soledad, Ecuador, in collaboration with Ben Morrow. The name combines Typica, referring to Typica Mejorado, the variety for which the process was specifically designed, and Oxi from oxidation, reflecting the method’s core oxidative mechanism.
In practice, Tyoxi operates through a two-stage sequential fermentation system, integrating both aerobic and anaerobic environments within one continuous process. The method is optimized for Typica Mejorado, a high-performing genetic selection derived from Typica.
Tyoxi represents a notable direction by uniting two seemingly opposing philosophies: the clarity and transparency of traditional washed processing with the sensory depth typically associated with anaerobic fermentation, forming a coherent and distinctive processing framework.
