Weiss is a coffee distribution method that uses a small needle or similar tool to evenly stir the coffee grounds in the portafilter, optimizing preparation for Espresso extraction.
In specialty coffee, the evenness of the coffee grounds before extraction directly impacts balance and clarity in the final cup. This method, known as the Weiss Distribution Technique (WDT), was developed to address clumping caused by grinding, ensuring consistent distribution. By minimizing channeling-where water flows unevenly through the coffee bed-WDT helps achieve a uniform extraction, preserving the coffee’s original flavors and delivering a clean, well-structured finish.
