HERITAGE IN PROGRESS – the prominent theme of the November Discovery Subscription is a dialogue between the past and the present. It is a respectful bow to the values of the past, and also the confident uplift of the new era. Heritage is not a relic, but a moving current, silently transforming with every breath of contemporary life.

Touching the box, you seem to unlock a door to a memory finding its new form. Each item in the box is a beat of time, and you, with your subtle perception, are the one who breathes life into this heritage symphony, allowing it to resonate in the present setting.

HERITAGE IN PROGRESS: Every step is a link between past and present

In the sun-drenched, windy region of Matagalpa, there is a family that has devoted more than a century to listening to the language of every coffee bean. Fincas Mierisch – a name associated with over a hundred years of preservation and development, is not just a farm, but a moving heritage. From the first pioneers to the fifth generation today, they continuously seek to harmonize traditional manual cultivation with modern science, reverence for Mother Earth with the innovative spirit of the new age.

Inheriting this legacy, two breaths of the land – El Limoncillo Yellow Pacamara and Mama Mina Red Pacamara – have joined the “team” of this month’s Discovery flavors, like two poles of a journey. El Limoncillo Yellow Pacamara is the guiding compass, symbolizing the enduring values that nature and humanity have co-created. Contrasting yet parallel, Mama Mina Red Pacamara is the horizon, the light of vision and innovation that constantly opens up new possibilities.

Every coffee bean is the crystallization of memory and evolution, carrying both the deep sweetness of the earth and the bold breath of new experiments. And when this fusion occurs, we witness a dialogue between the past and the present, where old values are not forgotten, but illuminated by the creative spirit of the new era.

EL LIMONCILLO YELLOW PACAMARA – The heritage compass guiding the journey

Amidst the breezy Matagalpa highlands, where morning dew still clings to every branch, there is a farm that has stood for nearly a century as a timekeeper for memory – El Limoncillo. For over a century, at an altitude of nearly 1,000 meters, the Mierisch family has left the footprints of five generations, who believe that heritage is not a past to be set aside, but a flame that must be passed on in motion.

On that land, the Yellow Pacamara appears as a shining point on the heritage map. This rare coffee varietal, with its characteristic ripe yellow hue, is not only a gift of nature but also a symbol of human perseverance. Each coffee bean is a direction, each harvest season is a turn of the time hand, guiding the coffee journey forward without losing its roots.

Processed using the traditional washed method, each bean seems to be cleansed through water and time, preserving the full essence of Mother Earth. As the aroma spreads, the cup of coffee reveals three deep layers of flavor, beginning with fresh blackcurrant like the morning, moving to rich blackberry like the call of the earth, and concluding with a gentle note of ripe apricot like the lingering echo of late afternoon.

Like the compass of heritage, El Limoncillo Yellow Pacamara has preserved the direction and reminds us of the artistry in every step. Within each bean is the story of the land and the people, of the sunny and rainy seasons gone by, and of the aspiration to continue living with time. That flavor, when tasted, makes us realize that heritage is not old; it is merely transforming into a new form – more refined, more profound, and closer than ever.

MAMA MINA RED PACAMARA – The horizon source of innovation

If El Limoncillo is the compass guiding from the origin, then Mama Mina is the horizon, where the light of innovation begins to dawn. The farm is named after the Mierisch family’s great-grandmother, as a tribute to the pioneering generation, yet it is also the clearest testament to the unceasing forward-moving spirit of today’s generation.

Located at altitudes between 1,275 and 1,400 meters, the farm faces harsh challenges: heavy rain, little sun, and scarce light. In this seemingly unfavorable environment, the farmers at Fincas Mierisch still diligently nurture the Red Pacamara variety with their calloused hands, and with the silent faith that light can still be found even in the rain.

It is amidst this challenge that the Mama Mina Red Pacamara lot was born, becoming a symbol of Fincas Mierisch’s progressive spirit. Generations have persistently experimented, improved processes, and maintained the traditional washed processing method. As the coffee aroma spreads, the red apple note opens with the clear sweetness of a new beginning, ripe apricot brings the round depth of time, and a hint of cinnamon leaves a warm aftertaste, like a tribute to the days of persistent labor.

Mama Mina Red Pacamara is where heritage meets the light of innovation. Amidst the challenges of nature, every coffee bean, under human care, carries the will and vision for progress, like a horizon always pointing forward. Sipping the coffee, you feel as if you are touching a story of perseverance, creativity, and a heritage that knows how to continue, opening up new possibilities for the journey ahead.

Message of November Discovery Subscription – Preserving ancient essence, breathing new life

There are values that shine through every rhythm of life without needing to be displayed. Heritage is one of them – created from the memories, time, and faith of people who choose to live slowly to listen to every movement of the earth. The November Discovery Subscription is a tribute to that flow, where the past is not only retold but is also continuously written with the creative spirit of the present.

On fertile and historically rich land, the Mierisch family has persistently dedicated over a century to cultivating not just coffee, but a lifestyle: respecting tradition and constantly moving forward. From El Limoncillo to Mama Mina, from the enduring yellow hue to the vibrant red color, every coffee bean holds the story of successive generations, people who believe that heritage is not a memory to be forgotten, but a journey to be continued with every season’s wind and the breath of time.

El Limoncillo Yellow Pacamara is the compass of memory, leading us back to the roots of sustainability, the balance created by the hands, heart, and faith of the grower. Mama Mina Red Pacamara is the radiant horizon, a symbol of unceasing innovation and the aspiration to reach further. These two directions, though seemingly opposite, blend into a single heartbeat, a single step, a single breath crystallized in every drop of coffee named heritage.

Because even as the last cup of coffee cools, a new chapter quietly opens somewhere…

Discovery Subscription invites you to continue your monthly appointment, where stories, flavors, and emotions will change forms again, but the spirit of exploration will always remain intact. Because with every passing month, heritage finds another breath, as a way for time to gently shift and open up a new region of memory in every cup of coffee.
