Natural process
Natural process is one of the oldest methods of coffee processing in which freshly harvested coffee cherries are dried whole. Before drying, the cherries are carefully sorted to remove unripe ones.
Once sorted, the cherries are spread out on patios or raised drying beds, and dry naturally under the sun and wind. Throughout this process, the cherries are regularly turned to prevent spoilage and fermentation while allowing the beans to absorb nutrients from the fruit. The drying phase is complete when the coffee beans reach a moisture content of 10–12%.
In specialty coffee, the natural process produces beans with a full body and distinct complexity, blending natural sweetness with vibrant fruit and floral notes. However, this method presents challenges in quality control, as it is highly dependent on climate and environmental conditions. When executed properly, the natural process can yield exceptional coffees, with Ethiopian coffee being a prime example—renowned for its bold, intricate flavors and a favorite among specialty coffee enthusiasts.
