Wash Process – The washed processing method is one of the key processes in shaping the original flavor of specialty coffee. Ripe coffee cherries are carefully selected, depulped, and then soaked in water, where natural enzymes break down the mucilage layer over 18-24 hours. Once fermentation is complete, the beans are thoroughly washed and dried until they reach the standard moisture level, typically decreasing from 40-50% to around 8-11%, depending on the terroir conditions of each growing region.

By maintaining strict control over each stage, this method preserves the coffee’s original flavor, highlighting the unique characteristics of the terroir and altitude. Washed-processed coffee often exhibits bright acidity, a balanced structure, and a clean aftertaste, clearly expressing the distinct personality of each coffee variety. Additionally, this process ensures consistency in harvest quality-an essential factor in the specialty coffee industry.
