Cupping
Cupping is the standardized process of tasting and analyzing coffee flavors, used to assess quality based on the Specialty Coffee Association (SCA) scoring system. This process follows a 100-point scale and utilizes the Coffee Taster’s Flavor Wheel to evaluate aroma, taste, aftertaste, acidity, body, and balance.
Beyond quality control, cupping ensures consistency across coffee lots and strengthens the coffee supply chain. It is also a way to explore unique flavors, offering a deep sensory experience that helps coffee enthusiasts recognize the impact of origin, processing methods, and terroir—as well as appreciate the craftsmanship behind specialty coffee.
Cupping also serves as a bridge between producers, roasters, and baristas, fostering knowledge exchange and collaboration to continuously elevate quality standards. This process not only drives the evolution of specialty coffee but also shapes global coffee trends and appreciation.
