Here, the menu pays deep respect to the craft of artisanal baking, where haste is set aside in favor of time, microbial life, and precise control of heat.

The sourdough heritage

At the heart of the kitchen are living wild sourdough starters, nurtured and maintained every day. Through slow cold fermentation, the dough develops a resilient gluten structure and a more layered organic acidity. We offer three of its most essential expressions:

  • Multigrain: rustic and full-bodied, with nutrient-rich grains that create a deeply satisfying chew.
  • Whole Wheat: made with the whole wheat germ intact, offering a nutty, earthy flavor with natural richness.
  • Regular:  the classic benchmark, defined by an airy open crumb and a beautifully crisp, chewy crust.

Handmade pasta at XLIII Kitchen, we do not use dried industrial pasta. Every strand is mixed, rolled, and cut by hand each day using premium flour and fresh eggs. This process preserves a subtle surface texture that helps the pasta hold sauce beautifully.

  • Tagliatelle alla Bolognese & Carbonara – two Italian classics prepared with deep respect for their original character. The Bolognese features a slow-cooked beef ragù with real depth, while the Carbonara is built on the proper emulsion of Pecorino, guanciale, and egg never cream.
  • Pesto Pappardelle: broad ribbons of pasta coated in a vivid green hand-made basil pesto, full of sunlit Mediterranean character.
