Heirloom
Heirloom refers to heritage coffee varieties that have been preserved through generations without modern genetic modifications or crossbreeding. In specialty coffee, heirloom varieties exhibit high genetic diversity, contributing to rich and distinctive flavors. These coffees are primarily Arabica, naturally thriving in regions with unique soil and climate conditions.
In Ethiopia, heirloom coffee inherits traits from wild coffee plants, demonstrating strong environmental adaptability and disease resistance. However, these varieties generally have lower yields, compensated by exceptional flavor complexity, balanced acidity, and a lingering sweetness.
Today, heirloom coffee includes various regional variations, each with unique characteristics. Notable examples include Kurume and Welicho, commonly cultivated in Ethiopia’s renowned coffee-growing regions, further enriching the diversity of specialty coffee flavors.
