Pour-over
Pour-over—also known as Filter at XLIII Coffee—is a manual brewing technique where hot water is poured over ground coffee through a cloth or paper filter at a 1:17 coffee-to-water ratio. This method preserves the coffee’s original flavors, resulting in a delicate yet complex cup.
With the rise of specialty coffee, pour-over—especially using the V60 dripper—is commonly paired with light roast beans to accentuate layered flavors, such as natural fruit notes or delicate jasmine aromas.
The precision required in pouring technique and extraction makes this method a favorite among Third Wave coffee enthusiasts.
